Recipe - Pork Kabobs

Brent's aunt shared this recipe with me several years ago and it is one of our favorite camping recipes:

Cube a pork tenderloin or thick pork chops into 2" cubes.
Marinate pork cubes in mixture of 1 cup teriyaki sauce, 1 cup soy sauce, several dashes of Texas Pete, 1/2 tsp ground ginger, 1/2 tsp garlic powder, and enough Mountain Dew to cover.

Let marinate for 8 hours or more.

Skewer meat along with onions, peppers, and tomatoes.

Grill at medium temp until done. Serve with rice and salad.

Summer Movie Clubhouse

I discovered that the movie theatre in Salisbury will be showing a children's movie each week this summer (6/17 - 8/20) and the cost is 10 shows for $5 is purchased in advance or $1 per show. This is an awesome deal...the movies include Shrek the Third, Hook, Happy Feet, Flushed Away, Doogal, and Over the Hedge, and some others. There are many other Cinemark/Tinseltown/Century Theatres offering this deal this summer. Go here to see if Cinemark will be offering this deal in your neck of the woods.

So, here's the catch - they are on Tuesday and Wednesdays each week at 10 am. Unfortunately, I won't be able to take Nolan to see many of them, if any at all, since I usually work during that time, but I did want to share it in case others can take advantage of the great deal.

The Atonement Child by Francine Rivers

I just finished another book by Francine Rivers. She also wrote Redeeming Love which was an awesome book. The Atonement Child is about a young Christian college student who is raped and becomes pregnant. It is an awesome story of how God takes care of us and will give us the answers that we need in His time. Both of the books that I have read by Francine Rivers include a reminder to us that God will deliver us through everything that we experience. I loved this book.

I am going to read a little more in Cash and Children the Challenge. I will probably take another work of fiction with me to Georgia next week and I will also probably listen to another book on CD on the way to and from Georgia. In a few weeks we will be going to the beach for a week, so I will have to be gathering some books for that trip.

Nolan's last day of kindergarten!

Well, today Nolan finished up kindergarten. He brought home lots of papers and writing from the school year. His report card was excellent and he is reading at a 2nd grade reading level. I can't believe that he is growing up so quickly. He is really smart and says a lot of things that really make me smile. He brought home a folder full of writing and I want to share 4 of his sheets with you. I'm going to type them exactly as he has them written...you will see that his spelling is excellent:

1 - (4-14-08) I am going camping on Wednesday. I hope it is hot. I am going in a camper.
2 - (4-21-08) I played on a playground beside the campsite with my little brother. It was fun without my little brother.
3 - (4-28-08) I love mommy. She is very fun but, sometimes she's to busy to play with me. But, when shes' done I know she's going to play with me.
4 - (No date...but I think it was in the last 2 weeks) Once upon a time ther was a dino. His name is Max. He was so rich he did'nt have any frends then one day another Dino came gave all his money to him. the end

The Perfect Summer by Luanne Rice

This weekend while we were camping I read one of the books that I picked up at the Edisto Bazaar while my mom and I were at the beach. I have only read 1 or 2 other Luanne Rice books and I enjoyed this one as well as the others. This book is a good story about surviving through bad experiences and circumstances. I definitely know a little bit about that so I could relate to the main character in this story.

I am also continuing to read Children the Challenge.

For my next work of fiction I am going to read The Atonement Child by Francine Rivers.
